Easy and Delicious Ways to Enjoy Sweet Corn this Summer… Part 3: Quick Corn

As sweet corn season is so close I can taste it I want to finish my 3 part series on ways to cook this delicious summer treat!  I don’t know about you but my life is a crazy mess; especially in the summer! It seems like every day there is something going on.  On these days its hard to find time to cook a delicious meal.  But, I have a solution to part of that problem.
Yep! You guessed it. I am going to let you in on my secret to cooking an ear of sweet corn when your on the go. Are you ready?? The microwave! What?? Yes, I said it. I cook sweet corn in the microwave sometimes and I am not ashamed. Microwave that baby and slap some butter and salt and pepper on it and there ya have it! The best part is  that cooking it this way only takes 4 whole minutes out of your day.  I think we can all spare 4 minutes.  So without further ado, Here we go!

  1. Once again the very first step is picking your sweet corn fresh.  For this way of cooking it is especially important because… well your cooking it in the microwave. What other explanation you need? 😉
  2. Soak ear(s) of corn in water for about 5 minutes. This allows it to have a little extra moisture to prevent drying out when cooking.
  3. Place ear of corn directly into microwave on a microwave safe plate. Do NOT remove husks.
  4. Cook for 3-4 minutes. Cooking more than two ears may require more time. Cooking time differs between every microwave so cook accordingly and use your best judgement.
  5. Remove corn from microwave with a dish towel or hot pad as it will be very HOT!
  6. Cut the end off about one row of kernels from the stem.
  7. Remove ear from husk by pulling it out from the end you just cut off. It should slide right out for the most part with a little squeeze and be almost silk free!
  8. Butter. And add salt and pepper to taste!

Note: After buttering corn this is also a good time to add any other seasonings and toppings you might want! (i.e. parmesan cheese, chives, garlic, etc.)

There are so many great ways to cook and eat sweet corn that you could literally have it different every day! The last 3 posts I have made are just a small look into the options you have. Who knows, maybe I’ll share some of my favorite dishes to add it to through out the summer!
